Strawberries & Cream Layer Bars
This all started a few nights ago. I was being good & treadmilling upstairs in the girls lobby, when I saw, from the corner of my eye, an abandoned box of bakery sugar cookies with a note, “free cookies.” I ignored them the that night & the next night assuming someone would come along & take the entire box. By the third night a few were taken but over half the box was left. That’s when I finally decided to take them all before they went bad. I wanted to make something with them. So that night while on the treadmill, I ran (get it?) through some ideas. I remembered an easy strawberry dessert my mom had made a few times with a sugar cookie crust. It’s a yummy pillsbury recipe actually. So that’s where I started. For this purpose, I halved it.
You’ll need an 8 oz block of cream cheese softened, an egg, a jar of strawberry sauce, an 8 oz. container of cool whip, fresh strawberries, & 1/4c. sugar. Plus 6 already baked & cooled sugar cookies. They can be homemade, store bought, or whatever you like.
Mix together cream cheese, sugar, & 1/3 c. strawberry sauce. Then add the egg & beat for 2 minutes at medium speed till creamy. Pour into a greased muffin tin, but only fill 6 slots. Bake at 350 for 20 minutes or till set. Cool in pan 10 minutes then remove to cool further.
In the meantime, slice up a handful of pretty strawberries. Might as well eat a few.
Fold 4 Tbs. strawberry topping into the container of cool whip.
Finally layer it all up- cookie, strawberry cheesecake, cool whip, fresh berries. Store in the fridge until you’re ready to serve.
I made these last night & set ‘em all up cute for my small group. Thursday nights are community nights on campus. So we have a short devo in our dorm, then break up into small groups. Afterwards is late night breakfast & some activity in the gym. My girls enjoyed the spread. I absolutely have the best group of girls in the dorm!
PS- I apologize for the poor poor lighting. Trying to figure out how to best take photos in my horribly lit white-wall-white-floor dorm room.
Anyways, hope you get to try these & love them I do! They’re pretty easy to make, taste delicious, & look adorable.
