Loaded BBQ Baked Potato Totchos

Totchos are really taking off lately & these ones are inspired by the iconic BBQ baked potato. This is my go to at BBQ places, which we frequent extremely often since we live Texas. They do not disappoint. This is the perfect way to use up leftover BBQ too!

To be honest, there are no measurements for this recipe. Find it freeing, if you will.  It’s more of a handful of this, a little extra cheese & all the bacon you have in your fridge. Don’t be mad! Embrace the flexibility.

The trick is baking (or frying) all the tater tots before stacking them in a skillet. You want each little tot to be nice & crispy! Once they are done, pile ’em up in your fave cast iron skillet (or any skillet). Loaded BBQ Baked Potato #Totchos

I do a layer of tots, bbq & cheese then the rest of the tots, more bbq & cheese plus all the bacon crumbles & diced green onion. Stick it the oven to broil watching it closely. You want the cheese to get all melty without it burning. So don’t leave the oven!

Pull it out at the perfect time then add a big dollop of sour cream & more green onion.

Give everyone a fork & dive on in. Easy, quick  & delicious dinner! This would be lots of fun to serve during a big game, football, basketball, baseball whatever.

Ingredients
  • shredded BBQ meat (beef, pork or chicken)
  • tater tots
  • cheddar cheese (or cheese of choice)
  • bacon (cooked & crumbled)
  • green onion (chopped)
  • sour cream
Instructions
  1. Bake tater tots according to package directions.
  2. Remove from pan & pile into skillet.
  3. Layer with BBQ meat & shredded cheese.
  4. Top with more BBQ meat, shredded cheese, crumbled bacon & green onion.
  5. Broil until cheese is melted.
  6. Add a spoonful of sour cream to middle of skillet.
  7. Serve immediately!

For the BBQ you can make your own, pick some up, grab a heat & serve container at your grocery store or use up leftovers. I make my BBQ in a crock pot. Throw in a pork shoulder/butt & pour a bottle of bbq sauce on top. Let it cook on high for about 4 hours then remove & shred. Use your stand mixer to shred the meat. Pour the remaining crock pot juices on top & add more BBQ sauce if needed. I also add in extra brown sugar & honey sometimes at the end. It always come out amazing!
