I’m sure you’ve noticed, I’m totally obsessed with holidays, all of ’em. The only exception seems to be St. Patrick’s Day. For some reason I can’t get into the all green everywhere decor…maybe I’ll try harder next year!
But, I can always make an excuse to celebrate with food. Most especially, breakfast food! PANCAKES.
I thought it’d be fun to gross my husband out & whip up some mean, green pancakes last weekend. So I set up a little St. Patty’s Day breakfast complete with silver dollar pancakes arranged in a clover fashion.
Just add a few drops of green food coloring to your usual weekend pancakes & cook some bacon on the side.
I cut all of my bacon in half as soon as I cut open the package, using kitchen shears. It seems to last longer this way & I eat less at a time. Plus, it fits in my cast iron skillet better.
Arrange your pancakes & bacon to resemble a 3 or 4 leaf clover. The 4 leaf clover is obviously the luckier way to go!
- pancake mix (prepared)
- green food coloring
- bacon slices
- Prepare favorite pancake mix as usual, adding a few drops of green food coloring.
- Cook pancakes silver dollar size.
- Cook bacon slices.
- Arrange 3-4 pancakes as a clover & add strip of bacon as the stem.
- Serve immediately with butter & hot syrup!
