Good morning y’all!
Every morning I get up with husband at 5:30 to make him breakfast before work…wife of the year please. It’s pretty much always something super quick & microwavable or toastable. So I suppose it’s not that impressive. Sometimes I do have time to make bacon or eggs; but, the usual menu consists of chicken biscuits, oatmeal, fruit, toaster strudels, fig newtons, breakfast burritos, croissants, yogurt, waffles, cinnamon-sugar toast, nutella, etc. I tried making those “omelet muffins” everyone raved about freezing & microwaving. The whole experience did not go over well with him. They turn out kind of rubbery in the end.
There is one thing I can always make ahead in big batches that is equal parts easy & healthy. Smoothies!
Personally, I am a hater of smoothies. I find them totally disgusting. I apologize to the frozen fruit world.
I am in love with the ease & ability to make a huge batch at one time & freeze them. All I have to do is remember to pull one out of the fridge the night before. Don’t worry if you forget, just run it under hot, hot water the next morning & it’ll thaw out fairly quickly.
Here’s my go to version for the Very Berry Smoothie.
Start with a 16 oz. bag of frozen berries.
Add them to the blender with 3/4 c. oj, 3/4 c. yogurt & 1 Tbs. honey.
Puree the mixture until it’s nice & smooth. Feel free to add more or less of anything to achieve the proper consistency/flavor you’re looking for. You can switch out juices or yogurts, or even add a banana. This is simply the basic recipe.
I will divide the smoothies up between 3 glasses & freeze them till it’s time to drink them.
- 16 oz frozen berries
- ¾ c oj
- ¾ c yogurt
- 1 Tbs honey
- Add all 4 ingredients to a blender.
- Puree until desired smoothness is achieved,
- Pour into glasses & serve immediately or freeze until ready to use.
- If frozen, thaw out overnight in the fridge.
