BLTC Ranch Wrap

Bacon is like gold in my house. We’re serious about it. My mom found some a couple weeks ago for only $1/lb. So she went crazy & now the freezer if full of 11 million pounds of bacon. That’s where my lunch inspiration came from yesterday.

This is seriously delish. I whipped it up for lunch yesterday & was oh so pleasantly surprised by how yummy it was! I love BLT’s already, so I didn’t figure there was much room for improvement. Wrong. There was room & I found it. Intro the BLTC Ranch Wrap!

You’ll need:

1 t. chopped green onion

1 t. mayo

1 t. ranch dressing

1/4 t. mustard

4 cherry tomatoes, sliced

3 slices bacon, cooked

1 tortilla

1-2 Romaine lettuce leaves

1 small handful shredded cheddar cheese

It really couldn’t get easier!

Get all your ingredients together.

Mix together the first 4 ingredients- green onion, mayo, mustard, & ranch.

Then start stackin’! The base is a tortilla, of course, this is a wrap after all. Warm ones are best!

Spread on your spread.

Lay the lettuce on top.

Then the crispy, heavenly bacon.

Arrange your tomatoes.

Using the cherry tomatoes here really makes a big difference in flavor. These little dudes are packed with vastly more flavor than a large tomato slice. Along with the spread, they really make the wrap.

Sprinkle on some freshly grated sharp cheddar cheese for a nice bite.

Whatever you have on hand works too!

Okay so maybe it turned out to be more of a BLTC Ranch chalupa…it didn’t “wrap” so well. I just need a bigger tortilla!

PS- Last night I made these sophisticated twice baked potatoes to eat alongside pot roast & rosemary carrots. It was a prefect meal y’all! Go check that recipe out again.
