The Great Pumpkin

     

     It’s October & that means pumpkins are popping up everywhere! Just like Cinderella’s pumpkin that turns into a carriage. These round orange gourds are being transformed into hundreds of different things.  There are so many creative ideas out there. I wanted to gather up a few of the more unheard of ways to use pumpkins. & so here they are:

  1. Here’s another yummy pumpkin recipe, Kathrine. I made it up!
    Pumpkin Potato soup
    It’s become one of those Fall Winter hearty healthy comfort foods.

    5 cups peeled and cubed fresh pumpkin(I cut a pumpkin in half, scoop all the seeds out for toasting and cut pumpkin in 2″ wedges like you were cutting a cantaloupe. Then cut off outer skin with a sharp knife.)
    3 large Idaho potatoes
    4 cups of filtered water
    1/2 sweet onion diced
    2 carrots chopped
    1 tbs nutmeg
    1 tsp cayenne
    1/2 stick of real butter
    1 tsp salt
    2/3 can of evaporated milk
    Put everything except milk and butter in a big pot. Bring to a boil and then reduce to a simmer till pumpkin is really tender. Then take your hand mixer and mix away. I like it lumpy but you decide how smooth you like it. Reduce heat. Add milk and butter. Serve with a dash of nutmeg and cayenne on top. Yum!
    Keeps in the fridge well for days.
